I don't count how many stitches I've done. That would take away from the time I could be stitching. You will have quite the nativity scene with all these Mill Hill pieces!
Like Linda, I count my ten-a-day piece but that's it. I think it's easier if you are doing a full coverage but otherwise it's tricky and time-consuming. These Mill Hill kits are a nice set.
